We hired Phillip to cook in our chalet in Chamonix for our parents 50th anniversary. It is the most enjoyable experience we have had of having a relaxing meal at home but with the feel of being at a high end restaurant in France. Philip takes care of every detail and you just relax and enjoy from the moment he starts cooking and lovely smells start to come from the kitchen until beautiful presented dishes are served. We would recommend him to anyone who wants to have a treat for a special celebration in the comfort of your holiday home.
We were all delighted with locally sourced, freshly prepared food including some from his own herb garden.

I just wanted to pass along how spectacular your meals were. Also, your service was equally spectacular. Dinners on those evenings were one of the highlights of our first-ever trip to France. What an incredible evening. Not only are you an amazing chef, but you were also just a joy to work with. It was a perfect way to set the tone for the trip. Each and every person enjoyed themselves, tremendously. The food was très magnifique!

Philippe took incredible care in every aspect of the meal – from consulting with us on the menu, to choosing local and regional ingredients, to sharing about each course. The food was tremendous, but it was the end to end gourmet experience that we’ll remember the most. Philippe gave us more than a dinner, it was a truly an experience. Fabulous food, amazing combinations we’d never seen before (hello olive oil ice cream!), all presented by a great host and brilliant chef in Philippe.

Thanks again for the fab food on Saturday night Philippe – it really was fabulous – and everyone really enjoyed it:) We were a bit slow getting started on Sunday morning – and not just because of the 10 bottles of wine we had to bring home with us!!! Poor planning on my part! ha ha! Kind regards

Thank you very much! Yes, we had a busy week of climbing, mountaineering and via ferrata amongst some wild thunderstorms and a fair bit of rain at times. Today we flew back to Glasgow just as the weather improved- never mind, we will try and be back in Chamonix before too long.
The food was great thank you; everyone really enjoyed them! We had a few left over but they had all gone by Monday lunchtime helping people to recover from their hangovers 😉. Kellie was fantastic also so thank you for organising her and, as I didn’t get an opportunity to say so myself, please pass on our gratitude to her.

Dear Philippe, We didn’t have the opportunity to say a proper goodbye and thank you on Saturday night. We were all in a fabulous food-induced trance and all powers were diverted to the enjoyments of digestion Our annual weekend at Martin’s chalet is a fantastic treat each year, made all the more special by the magic of your kitchen creations – thank you! I just got back from our trip and wanted to write to thank you once again for a wonderful dinner. Your dinner was the best meal we had during our two week stay in Europe. Everything you presented to us was magnificent, every course was as good as the last and that desert was spectacular. I could not have been more pleased with the evening. I would be glad to be a reference for any party looking to use a chef during their stay in France. Your meal was the best value we had……not our least expensive meal but from a value perspective, you really deliver.

We had the distinct privilege of visiting the Château St.-Philippe where for two nights we sampled the cuisine of Chef Philippe Collus of Service-Compris. Dining in one of the château’s many vaulted, medieval rooms with a balcony looking out onto the Savoy countryside, we enjoyed two, five-course meals. The first included a tartlet of vegetables with a creamy mozzarella di buffalo served with homemade pesto and crispy local ham. Later in the week, Philippe surprised us with his rendition of a parmesan-crusted poached egg accented by Savoie cured ham and roquette leaves. Of both meals, however, his pièce de resistance was a baked veal cutlet topped with mushrooms and bathed in a sweet sauce of our chef’s own creation. Taking in Philippe’s unique blend of original presentation with outstanding local Flavors—especially while sitting at the foot of the Bauges mountains—was an absolutely magical experience.

Just a quick note to say thank you very much for all you did during our stay. We all felt welcomed into the “La Forge” family. It was great!
