We had the distinct privilege of visiting the Château St.-Philippe where for two nights we sampled the cuisine of Chef Philippe Collus of Service-Compris.

Dining in one of the château’s many vaulted, medieval rooms with a balcony looking out onto the Savoy countryside, we enjoyed two, five-course meals. The first included a tartlet of vegetables with a creamy mozzarella di buffalo served with homemade pesto and crispy local ham.

Later in the week, Philippe surprised us with his rendition of a parmesan-crusted poached egg accented by Savoie cured ham and roquette leaves. Of both meals, however, his pièce de resistance was a baked veal cutlet topped with mushrooms and bathed in a sweet sauce of our chef’s own creation.

Taking in Philippe’s unique blend of original presentation with outstanding local flavors—especially while sitting at the foot of the Bauges mountains—was an absolutely magical experience.

I just got back from our trip and wanted to write to thank you once again for a wonderful dinner. Your dinner was the best meal we had during our two week stay in Europe. Everything you presented to us was magnificent, every course was as good as the last and that desert was spectacular. I could not have been more pleased with the evening. I would be glad to be a reference for any party looking to use a chef during their stay in France. Your meal was the best value we had……not our least expensive meal but from a value perspective, you really deliver.

It was a pleasure to have Philippe in our kitchen. The children still talk about the special chocolate desert. We were two families at our chalet for a ski holiday, and after a day on the slopes we would come home to Philippe in our kitchen. Philippe made meals for the children, that they all really enjoyed, while the adults had a glass of wine by the fireplace We were then served the adult dinner, and were never disappointed. We all enjoyed being spoiled by Philippe’s professionalism and his great meals, and the kitchen was always left spotless.

We had four adults and 6 hungry children to feed each day before and after skiing. Having Philippe reliably arrive each morning before dawn to get us off to a delicious start to the day was brilliant. And each afternoon arriving home to freshly baked treats was always something to look forward to. But the dinners that Philippe prepared eclipsed everything else (as well as most restaurants in Chamonix). Each and every one of our six junior diners all had different likes and dislikes, for which Philippe always had a gastronomical answer.
Philippe prepared our Christmas day lunch along with matching wines and champagne. It was one of the best festive meals we have experienced.
We also appreciate the little things like using the local mushrooms that he’d picked during the previous summer and his use of local produce (which always came with a story about who and where it was made).
We will definitely use Philippe again when staying in Chamonix.

I just wanted to write and say a huge thank you for Saturday. When we had our venue problem you stepped straight in and took the worry off our shoulders and on the day you were a star.

The food was absolutely wonderful. Everyone commented on the canapés how varied and tasty they were and how they just kept on coming. The meal was the same. It was obvious that it had all been prepared fresh and with fresh ingredients. The eggs were done to perfection and the main course was just delicious, cooked and presented to perfection. I really enjoyed the cheese selection and then that was topped off by two wonderful deserts. The pear tart was so light and the chocolate tart just deliciously yummy. Tim and Sars meant to come and thank you for doing their special Les Houches deserts but Charlie was taking their photos and then time seemed to take over. Everyone said they could not eat any more but I noticed there were none of the petit fours left at the end of the evening.

The girls too, were excellent. Pacing the service, lovely smiles, attentive to people?s needs and nothing was too much trouble for them. Please pass on our grateful thanks to them. I think everyone one of the people there passed comment about them.

Sorry not to have written earlier to say how much we enjoyed the delicious meal that you cooked for us on 19 March for the special birthday dinner. It made it a very enjoyable dinner and evening, which we all enjoyed. Cherie looked after us beautifully and you both left the kitchen absolutely spotless, which was much appreciated. I am only sorry that three of the family missed eating your delicious food.

Thank you too for passing John the contact of one of your collegue for the fondues ? he looked after us well and we were more than happy with our fondue evening on the Friday.

Thank you for making our wedding dinner truly memorable for our 50 guests who traveled to Chamonix. The dinner turned out exactly as we had hoped, a fancy BBQ theme with a French twist. I hear most brides don?t actually get to eat at their wedding because they are too busy talking to guests, but I sat down and enjoyed every bite of that dinner. Especially loved the grilled Provence prawns and the papillote of fresh cod. And I?m hoping I can sneak your recipes for the penne salad and fennel broad bean salad out of you so I can continue to remember our wedding dinner for years to come.

We can?t wait to return to Chamonix for a reunion with our families and hire you again as our chef.
